Mutton Indad Recipe is very famous in Mangalore, Karnataka. We usually use Pork for this recipe. However in places where you don’t find good quality Pork, lamb meat or goat meat is a very good alternative. We have used goat meat, also known as Mutton in our recipe.
For those of you who like an occasional non spicy version of Mutton Recipes, our Mutton Indad recipe will be a treat. It will leave you finger-licking as the dish is slightly sweet and tangy. People in Goa and Mangalore use Vinegar in their meals to give a tangy flavor for their non vegetarian recipes. Indad recipes is one of the traditional recipes from Mangalore.
What does Mutton Indad go well with
The consistency of Mutton Indad can be semi gravy or dry but Pork Indad is usually relished as semi gravy. You can either have this dish with Roti or Rice or the very famous Sanna/Idli. Alternatively, you may even choose a pav or a bread with this recipe.
Variations
We have used White Vinegar in this recipe. You may use vinegar of your choice too.

Ingredients
Indad Masala Ingredients - For grinding
- 2 medium Onions
- 1.5 inch Ginger
- 10 cloves Garlic
- 1 tsp Cumin Seeds
- 6 dried Red Chillies
- 1/2 tsp Turmeric Powder
- 4 tsp White Vinegar or any other vinegar of your choice
Ingredients to cook Mutton
- 1 tbsp Groundnut oil or sesame oil
- 1 tsp Ginger Garlic Paste
- 1 Kg Mutton/Goat Meat
- 1/4 tsp Garam Masala
- 1 cup Water
- Salt as per taste
Ingredients to cook Mutton Indad
- 1-3 tbsp Ghee
- 2 Cinnamon sticks
- 4 Cloves
- Salt as per taste
Instructions
How to prepare Indad Masala for Mutton Indad
- Take a blender and add two roughly chopped Onions
- To the Blender, add 1.5 inch Ginger
- Add 10 cloves of Garlic to the blender
- Add 1 tsp of Cumin seeds
- Add 6 dried Red chillies
- Add 1/2 tsp Turmeric Powder
- Lastly add, 4 tsp of White Vinegar. You may choose to add any other vinegar you like
- Now Grind all the above mentioned ingredients into a fine paste. Your Indad Masala is ready
Instructions to cook Mutton
- You need to cook Mutton separately for this recipe. To do so, Heat a pressure cooker and add 1 tbsp of oil. We use Chekku oil/Wood pressed oils for most of our recipes, as it is good for health (more good fat)
- Once the oil is heated, add 1 tsp of ginger-garlic paste and saute well
- Now add 1 Kg Mutton/Goat Meat to the cooker and mix well
- Add a cup of water to this Mutton. The Mutton will release some water of its own too, so we don't need to add more water. If you feel this is less you can add a half cup extra water
- Add Salt as per taste
- Add 1/4 tsp Garam Masala powder. Mix all the ingredients well
- Close the pressure cooker and cook the Mutton till it is completely cooked.
- Once the Mutton is cooked, you will see that the Mutton stock is very less in the cooker. We added less water to the pressure cooker since we don't need more stock for this recipe.
Steps to make Mutton Indad
- Take a Kadai or wok, add ghee approx. 1-2 tbsp and let it heat
- Add the Indad masala to the Kadai and saute well.
- Now, cover and cook the Indad masala, till it starts to blend with oil and the oil starts to float on top
- Once the Indad Masala is cooked, take it in a separate container, so that it can be used later in the recipe
- In the same Kadai, add some more ghee approx. 1 tbsp and let it heat
- To this, add 2 cinnamon stick and 4 cloves and fry this in ghee for few secs, we need the aroma of these spices to be infused into our Ghee
- Now, its time to add the cooked Mutton along with its stock in the Kadai.
- Fry the Mutton on high heat till it becomes brown. Browning of Mutton gives a good flavor to the dish
- Now, add the fried indad masala to the Mutton and mix well
- Add Salt as per taste if required
- Mix everything well and fry the Mutton till it reaches your semi gravy or dry consistency.
- Your Mutton is ready to be served.
