Ingredients
500gmsElephant Foot Yam | Suran | Senai KizhanguCut into small cubes
1 1/4tbspOil
1/4tspTurmeric Powder
3/4tsp Chilli Powder
1smallLime juice
SaltAs per taste

Cut the outer brown layer of Yam
Now chop it into small cubes
Heat a pan and add oil
Add chopped Yam and stir for a minute
Add Turmeric Powder and mix well
Add Chilli Powder and give it a good stir. You can add more chilli powder based on your liking
Add Salt as per taste
Fry the Yam till it is almost cooked. Frying the Yam on low to medium low flame might take around 15-20 mins
3 mins before switching off the flame, add lime juice and mix well
You will know that the Yam is cooked when it shrinks a little and has changed its color to brown, as seen in the picture. The texture of the Yam will be little crispy, that is when you need to switch off the flame.
Now your Yam is ready to serve. You can garnish it with chopped coriander leaves
Notes
Yam is little itchy in nature. So when you cut the Yam, you can prefer to wear gloves. I tried a couple of methods but I still couldn't get off the itchiness completely. So gloves is better option.
