Mutton Nalla Ennai Kari

A South Indian delicacy which is a Goat Meat dry prepared with Sesame Oil.

Ingredients

  • 200 ml Sesame Oil Wood pressed oil or cold pressed oil
  • 2 tsp Fennel Seeds
  • 1 tsp Shahi Jeera/Black Cumin
  • 2 Bay Leaves
  • 4 Cloves
  • 3 Cardamons
  • 4 Dried Red Chillies
  • 1 Inch Cinnamon Stick
  • 8 twigs Curry Leaves
  • 600 gms Small Onions also known as sambar onions
  • 1 small Tomato Chopped
  • 3 tsp full ginger garlic paste
  • 900 gms Mutton or Goat Meat
  • 1/2 tsp Turmeric Powder
  • 1 1/2 tsp Chilli Powder
  • 1 tsp Cumin Powder
  • 2 tsp Coriander Powder
  • Salt As per taste
  • 1 tsp Pepper Powder

Instructions

How to make Mutton Nalla Ennai Kari

  • Heat a pressure cooker and add Sesame oil
  • When the oil is hot, add Fennel Seeds, let it release its aroma
  • Add Shahi Jeera and fry for 30 secs
  • Add whole spices and Red chillies and fry for few secs
  • Now, its time to add curry leaves
  • Now, add chopped small onions
  • Add Some Salt as per your taste
  • Fry till the small onions are translucent
  • Now, it is time to add Chopped Tomatoes
  • After the Tomatoes turn soft, Add Turmeric Powder and Stir once
  • Add Ginger garlic Paste and stir well and fry for 2 mins
  • Add Chilli Powder and stir well
  • Add Coriander Powder
  • Add Cumin powder and mix well
  • Add Mutton or Goat Meat and mix well with all the other ingredients
  • Add water till the Mutton is almost covered in the vessel and give it a good stir
  • Close the pressure cooker and cook till the Mutton is completely cooked and switch off the flame.
  • After the Pressure cooker is cooled, open the lid , stir the Mutton once, you will see that it has excess water which needs to be reduced. Switch on the flame and reduce the water completely
  • Add Pepper powder now while stirring
  • Once the water is completely reduced, Mutton Nalla Ennai Kari is ready to serve

Notes

In the last step, after the water is reduced, you will see the oil floating on top. That is the indication that your Mutton recipe is done and ready to serve.
People who are not used to seeing so much oil, floating on top, need not worry about health, since all the thokku recipes in south india, which tastes like pickle, are prepared with Sesame oil. This oil is healthy and can be consumed with so much oil floating on top. 
Just make sure you are either using Wood pressed oil or cold pressed oil and not refined sesame oil.
