Ingredients
1smallWood Apple or Bel or Bael or Vilampazham
200gmsJaggeryor as per the tanginess
1Big lemon juiceYou can more as per taste
7-8leavesMint
1 pinchSalt
2cupsWaterinitially, then add as required

How to prepare Bel Sharbat or Wood Apple drink
Cut open a Wood apple.
Scoop out the pulp from Wood Apple
Soak the pulp in water for about half an hour
If the pulp is raw or little hard, then you need to give it a boil
Cool the Boiled mixture
Now smash the pulp thoroughly in the container
Take a filter and squeeze out the liquid from the pulp as much as possible. You can add some water if needed to extract the pulpy liquid. Some fiber and seeds will be left out in the pulp
Now add jaggery in the extracted liquid and let it dissolve completely. The quantity of Jaggery is based on the Tanginess of Wood Apple.
Add some lime juice. I have used one big lemon. You can add little more based on the quantity of liquid extracted
Add a pinch of salt
Add mint leaves
You can add some water to the mixture, since the above Juice will be thick, or you can use as it is.
You can keep the Juice in the fridge for 15 mins or Add some ice cubes and serve it.
Notes
If your Wood Apple is already ripe and very pulpy you can skip the boiling step. Boiling makes the extraction easy if the Wood Apple Pulp is little hard or raw.
