Grate all the 3 carrots and keep it aside.
In a Pressure Cooker, add ghee.
Add cashews and fry for 1 min and keep it aside.
In the same ghee, add the grated carrot into the cooker and stir for 30 secs.
Now add salt and stir to avoid colour change.
Add water into the cooker.
Now add jaggery into the cooker and let it melt.
Add milk and stir again.
Now add condensed milk.
Add cardamom powder for flavor.
Close the lid of the cooker and 2 whistles.
Open the cooker once it cools down.
On high flame keep stirring and add ghee.
Add the cashews which were tossed in the ghee.
Keep stirring to avoid burning at the end.
Now Gajar ka halwa is ready to serve.
