Choco Lava Cake | Chocolate Lava Cake | Molten Lava Cake – Chocolate Lava cake is a cake which has a Molten center. There are many ways of preparing a Molten Lava Cake, few people prefer it Eggless or Vegan style or Keto style or with Egg. But this Dessert is Yum any way you prepare it.

 

Choco Lava Cake recipe has one major thing to make note of, that is, the molten center. Different ovens produce perfect molten center at different temperatures. You need to try a batch to check what temperature suits you the best according to what oven you use. For my oven it worked at 12 mins at 180 C.

 

Now, if you are wondering if the lava cake is actually an under cooked cake, then yes you are right, BUT it has a different batter consistency compared to a regular cake.  A regular chocolate cake has a thin batter consistency comparatively. The lava cake’s molten center, does not feel under cooked because of its thick batter consistency. The molten lava center gives you the taste of rich chocolate and not of a chocolate batter.

Tip: While cooking the cake in your Oven, if your cake browns at the top before cooking the sides, you need to cover the top of the ramekin with an aluminium foil and cook it for 7 mins and uncover the ramekin and cook it for another 5 mins (the time mentioned above are just trial numbers, can vary according to oven. You need to try your batch to test your oven).

Variations

We have not added Vanilla Extract to the recipe, you may add it if you wish to. Also, the quantity of powdered sugar or icing sugar is entirely based on your taste buds. We have used Bittersweet Chocolate chips, so the sugar quantity is based on our liking. You can prefer to use semi-sweet chocolate or any other chocolate, but make sure you adjust the sugar quantity according to it. Also the Chocolate you use matters, since the richness of cake depends on the chocolate you use.

Ingredients

  • 125 gms Bittersweet chocolate chips
  • 85 gms Salted Butter
  • 2 Egg Yolks
  • 2 whole Eggs
  • 100-120 gms Icing Sugar or Powdered Sugar
  • 3 tsp All purpose flour or maida
  • Butter for coating Ramekin
  • Flour for coating Ramekin

Instructions

How to make Chocolate Lava Cake

  • Melt Chocolate chips and Butter in a double boiler or microwave
  • Take 2 Eggs yolks and 2 whole eggs in a container and beat well.
  • Add Icing Sugar in batches and beat well with the eggs 
  • The mixture should be nice pale yellow in color and beat well till the volume of the mixture should double in size
  • Now, add the melted chocolate mixture in egg mixture and blend it well. 
  • Add all purpose flour and mix well
  • Preheat the oven for 180 degree Celsius 
  • Meanwhile, coat the ramekins with butter 
  • After applying the butter coating, add some all purpose flour and coat the buttered ramekins
  • Add the chocolate lava cake batter to the Ramekins. Batter should be added till it reaches half of the Ramekin
  • Once the oven is preheated, place the Ramekins in the oven for 12 mins or so
  • Once the Lava cake is done, cool the ramekins 
  • De-mold the cake from the ramekins and serve hot. 

Notes

Baking Instructions -
Every oven bakes the Lava cake differently. You can prefer to set your over temperature from 170 degree Celsius to 200 degree Celsius. It should bake between 10-15 mins.
 
Also, while cooking in the oven, if your cake starts to burn on the top without cooking the sides, make sure you cover the ramekins with aluminium foil and cook for about 7 mins and remove the foil and cook for 5 mins. Adjust these timings as per your oven. (The motive of this method is to cook the Lava cake on the sides and keep a molten center)
 
Also the quality of Chocolate you use matters, since the richness of cake depends on the chocolate you use.
