Kadai Chole or Kadai Chana serves as an accompaniment to Rice or Roti.
Variations to Kadai Chole
You can add Onions too, we have added only tomato. This gives a good tangy flavor. You can replace lemon juice with Amchur powder(Dry Mango Powder) or Anardana powder(Pomegranate seeds powder) or Chat masala. If you want a Curry consistency, add Tomato puree and Onions. Kadai Chana is a good accompaniment to Poori or Bhatura.

Kadai Chole
Ingredients
- 2 cups Chana or chickpeas soaked overnight
- 2 medium sized Tomatoes finely chopped
- 2 tsp Ginger garlic paste
- 1 inch ginger chopped
- 2 cloves Garlic
- 1 Green chilly
- 2 tsp Coriander seeds
- 3 Dried red chillies
- 1 tsp Garam masala
- 1 full Lemon's juice
- 3 tsp Ghee
- Salt As per taste
- Coriander leaves for garnish
Instructions
How to make Kadai Chole
- Soak Chana Overnight.
- Take a pressure cooker, Add water, Add soaked Chana or Chickpeas
- Add Salt as per taste. Pressure cook Chana/Chickpeas for 4-5 whistles or till it is cooked fully
- Take a pan and dry roast coriander seeds
- Also dry roast red chillies.
- Make a dry powder Masala of the two roasted ingredients and keep it aside
- Add ghee in a Pan or Kadai
- Add ginger garlic Paste and fry till the raw smell of ginger garlic paste disappears.
- Add chopped tomatoes and cook until soft.
- Add green chilly, garlic and chopped ginger and fry for 1 min.
- Add salt as per taste
- Add the dry ground powder Masala.
- Fry until the oil leaves from the Masala.
- Add boiled Chana and fry for 5 mins
- Add lime juice and fry for 2 mins.
- Add garam Masala and for 2 more mins.
- Add chopped coriander leaves, mix well and turn off the fire.
