Shredded Chicken Recipe | Pichu Potta Chicken Fry
Ingredients
For Boiling Chicken
- 3 tbsp Oil
- 2 tbsp Onions Sliced
- 2 tsp Ginger Garlic Paste
- 1 Full Chicken Cut into big pieces
- Water Till it almost covers the chicken
- Salt As needed
- 1 tsp Garam Masala
- 1/4 tsp Turmeric Powder
For Chicken Fry
- 100 ml Sesame Oil
- 1 tbsp Shahi Jeera
- 2 Green Chillies slit into two
- 2 Bay Leaves
- 1 inch Cinnamon stick
- 1 Star Anise
- 4 Cloves
- 1/4 tsp Pepper corns
- 5-6 Dried Red Chillies
- 1 handful Curry Leaves
- 1 Big Onion Sliced finely
- 1/4 tsp Turmeric Powder
- 1/2 tsp Chilli Powder
- 1 Big Tomato chopped
- 2 tbsp full Ginger garlic Paste
- 1 tsp Garam Masala
- 1 tsp Coriander Powder
- 1 tsp Cumin Powder
- 1 tsp Pepper Powder
- 1 tbsp Lemon Juice
- Coriander Leaves Handful
- Salt As required
Instructions
- Heat a pressure cooker and add oil
- After the oil is heated, add sliced onions and fry it becomes slightly brown
- Add ginger garlic paste and fry for 2 min
- Add Chicken
- Add water till it almost covers the chicken
- Add Salt
- Add Garam Masala
- Add Turmeric Powder. Stir well and Close the lid and pressure cook till the chicken is cooked.
- When the chicken is cooked, Separate the chicken from the stock
- Debone the chicken and Shred the Chicken pieces. Keep some Stock aside, we will need it for the fry. Discard the bones.
- Now Heat a pan and add Sesame Oil
- Add Shahi Jeera
- Add Slit green chillies
- Add Whole Spices - Bay leaves, cinnamon, cloves, pepper corns, star anise
- Add Red chillies
- Add Curry Leaves
- Add Sliced Onions and fry till transluscent
- Add Turmeric Powder
- Add Chilly powder, stir well and cook for 2 mins
- Add Tomato, cover and cook till it is soft
- Add Ginger garlic paste and cook for 2 mins
- Add Garam Masala, Coriander Powder and Cumin Powder and stir well
- Add One cup of Chicken Stock and cook for 5 mins
- Now, its time to add Shredded Chicken.
- Give it a quick stir. Let it blend well with the Masala.
- Now add another cup of Chicken Stock and Stir well
- Add Pepper Powder and Cook till the stock reduces
- Now its time to add lime juice and stir well
- Cook for 5 more mins, Add coriander leaves and stir well
- Cook till the stock is reduced and you get the consistency of Chicken fry as seen in the pic
