We have used potatoes, peas and carrots in this recipe. You can choose your favorite vegetables to go with this. Usually french beans and cauliflower can be added to this gravy. You can use homemade coconut milk as well store brought. Both goes well with this recipe. We have used butter for sauteing, you can use coconut oil too.

Kerala style Vegetable Stew

Kerala style Vegetable stew – A easy delicious light gravy with veggies of your choice blended well with coconut milk.

Ingredients

  • 1 tbsp Butter
  • 2 medium sized potatoes diced
  • 1 large Carrot diced
  • 1/2 cup Fresh peas
  • 2 medium sized Onions finely chopped
  • 2 Medium sized Tomatoes finely choped
  • 10-12 Curry leaves
  • 250 ml coconut milk home made or store brought
  • 1/2 tsp Turmeric powder
  • 1 tbsp pepper powder
  • 1 cup Water or second round of extracted coconut milk
  • salt as per taste

Instructions

  • Cut potatoes and carrot in cube size. Chop tomatoes and onions.
  • Heat the pan and add butter.
  • Add curry leaves and saute it.
  • Add peas and saute it for few secs
  • Add chopped onions and saute it till translucent.
  • Add all the chopped vegetables along with tomatoes and saute it well
  • Add Turmeric powder and saute it
  • Add Pepper powder, salt
  • Add water and cook it until the vegetables are 3/4th done. Keep adding water if required.
    Note: Make sure the vegetables are not mashed. It should be neatly cooked.
  • Once the vegetables are 3/4th done, add Coconut milk and stir for 2-3 mins.
  • Garnish with curry leaves and coconut milk. Vegetable stew is ready. Serve hot.

Notes

Step 1
Cut potatoes and carrot in cube size. Chop tomatoes and onions.
