Spanish Omelette | Tortilla de patatas

Spanish Omelet is traditional Spanish dish, which is made of eggs and potato. Sometimes, it is paired with onions too. This dish can be gooey in the middle as per liking.

Ingredients

  • 4 Eggs
  • 1 small Onion Sliced
  • 3 medium Potatoes Chopped
  • Salt Taste
  • Oil to deep fry
  • Chilly Flakes or any seasoning for garnish

Instructions

  • Break open 4 eggs in a container and beat it well
  • Add Salt to the beaten eggs and mix well
  • Slice a small onion and chop 3 medium Potatoes
  • Deep fry the Onions and Potatoes. The potatoes should be cooked well
  • Add the fried onions and potatoes in the egg mixture. Let it soak in the egg mixture while the pan is getting hot. (optional: You can smash the potatoes a little to blend in it egg mixture)
  • Heat a frying pan and add oil in it
  • When the oil in the pan is heated, add the egg mixture entirely with onions and potatoes. The pan should be small enough, to exactly hold the egg mixture
  • Fry the omelette on one side. Let it not burn
  • For frying the other side, keep a plate on top of the pan and flip the omelet on the plate
  • Now, slide the omelet back in the pan and cook the other side. Tuck in the corners of the omelet so that, you can get a thick fluffy omelette. 
  • Now your Omelette in ready. Garnish the Omelette with your favorite seasonings. I have added Chilli Flakes here.

Notes

The pan size should be small to fry this Omelette. If you pan is big, add some more egg and potatoes to match the quantity of your pan. Spanish Omelette should be thick and fluffy.
