Garlic Chicken Roast

Garlic and Chicken are the main Ingredient in this recipe. The final dish tastes as good as any Chinese Garlic Chicken minus the sauces. Tomato puree with spices is used as a replacement for Chinese sauces

Ingredients

For Marination

  • 500 gms Chicken preferably boneless
  • 1 full pod Garlic make a fine paste
  • 2 tsp Chilli flakes
  • 1/2 tsp Turmeric Powder
  • 2 tsp Chicken 65 masala red color masala
  • Salt As per taste

For Garlic Chicken Roast

  • 4 tbsp Oil
  • 1 big Tomato pureed
  • 3 Inch Cinnamon
  • 2 Bay leaves
  • 2 Star Anise
  • 4 Cloves
  • 3 Green cardamon
  • 6 Dried Red chillies
  • 1 pod Peeled Garlic Finely chopped
  • 2 medium Onions Finely chopped
  • 1/4 of Big green Capsicum thinly sliced
  • 1/4 tsp Turmeric Powder
  • 100-150 ml Water

Instructions

How to Prepare Garlic Chicken Roast

    For Marination

    • Take the chicken in a vessel, Add Garlic Paste (we would need one full medium sized garlic pod, made into paste), Chilli flakes, turmeric powder, salt, Chicken65 masala (We have used store brought , you can take any Chicken65 masala). Let the marination rest for 30 mins
    • Heat a pan and add oil
    • Add all the spices - Cinnamon, green cardamon, star anise, bay leaves, cloves and fry till aromatic fragrance releases
    • Add Dried red chillies and fry them for few secs
    • Add chopped garlic and fry till they turn slightly brown. This way the garlic flavor will be strong enough to taste like a Garlic recipe
    • Add finely chopped onions and fry till it translucent 
    • Add Turmeric powder and stir well
    • Add marinated chicken and mix the chicken well in the pan
    • Cover and cook for 2 mins for the current flavors to mix well
    • Add chilli powder for more spice - if you prefer little less spice then skip this step
    • Cover and cook for 2 mins
    • Now Add tomato puree and mix it well
    • Add Capsicum slices and mix well
    • Cover and cook for 10 more mins
    • Open and mix well and add water
    • Cover and cook till the chicken is completely cooked
    • Now for the roast, open the lid and cook for few more secs, stirring continuously till you get the roast structure or till all the water evaporates
